HHG NILE PERCH FISH/ NESICHAT HANILOUZ DISH – 1 fresh fillet of Nile Perch – 1 Can Chickpeas – 1 Can Dices Tomato – 1 Red Pepper Sliced – 1 Cup Fresh Chopped Cilantro – 1 Head of Garlic (half minced half whole cloves) – 2 tbsp Tomato Paste – 1 Cup Sliced Mushrooms – Olive Oil – Salt & Pepper – Paprika, Tumeric, Cumin, Red Chilli Flakes Directions: Cut & Spice your Fish. Let the spices sink into the fish as you heat the skillet. Drizzle Olive Oil onto the hot Skillet. Sear the fish on both sides. Remove and let it sit on the side. Lower the heat to Medium and poor in the chickpeas, Red Peppers, Mushrooms and stir in the tomato paste. Add the spices. Once the paste is nicely rubbed into the vegetables, poor in the can of diced Tomatoes. Let the mixture simmer on medium for 10 minutes. Add in your fish on top. Poor in Tomato Sauce, the remaining Red Pepper Slices and fresh Cilantro. Simmer on Medium for 20 mins. And there you have it. . . Pumpkin Spice Salmon Recipe

•Prep Time: 10 minutes •Cook Time: 15 minutes •Total Time: 25 minutes •Yield: 4 •Diet: Gluten Free INGREDIENTS • 4 wild caught salmon fillets (about 4 oz each) • 1/3 cup pumpkin • 3 Tablespoons brown sugar or coconut sugar + extra for sprinkling • 1 teaspoon pumpkin pie spice • 1/2 teaspoon apple cider vinegar • 1/4 teaspoon sea salt • 1/4 –1/3 cup roasted and salted pumpkin seeds I used sweet ones from Trader Joe’s! INSTRUCTIONS 1. Preheat oven to 400°F 2. Make the glaze: In a small sauce pan on low, stir together pumpkin, sugar, pumpkin pie spice, apple cider vinegar and sea salt until sugar has dissolved and the mixture has thickened just a bit. 3. Arrange salmon fillets, skin side down, in a single layer in a baking dish. Spread pumpkin glaze over the fish, coating evenly. Sprinkle a quarter of the pumpkin seeds over each fillet. 4. Bake until fish is opaque but still bright pink inside, 15 to 20 minutes. 5. Serve with a an extra sprinkle of brown sugar on top.
